Even as a homeschooling mom, I really struggle with what to make my kids for lunch. For the last year, our lunchtime staples include eggs, PB&J, pasta, and sometimes ramen noodles. Wuh. We needed a kick in the pants to get out of that rut and start putting together some healthy meals that boost our energy and ability to focus on afternoon lessons/projects.
I see a lot of moms buying fancy lunch boxes with compartments in them, but the reality is, I'm not going to spend a bunch of money on one when I can just pick up some disposable storage containers that work just as well, are washable, and ultimately recyclable.
